High-Mountain cuisine: Javier Torres and Andorra's culinary tradition

Javier Torres shared his vision of high-mountain cuisine, highlighting its deep connection to nature and tradition. Together with his colleague Toni, Torres has opened an innovative restaurant that blends interior design with high-quality cuisine, offering diners a unique experience where they can watch the chefs in action. This space is not only characterized by its harmonious atmosphere and exceptional service but also seeks to return to the essentials by using local ingredients and traditional techniques.
During his talk, Torres explored the connection between high-mountain cuisine and survival cooking, emphasizing the importance of adapting to an extreme environment. Preservation techniques such as smoking and fermentation were mentioned, as they are fundamental to developing a cuisine with a strong identity. Additionally, the influence of Catalan and French cuisine in Andorra was discussed, where each tradition contributes unique elements without blending together, thereby enriching the country’s gastronomic offerings.
One of the iconic dishes discussed was trinchat, a classic that reflects the local essence. This dish, which combines Iberian pork loin and cabbage, is prepared in a way that allows each region to contribute its own ingredients, thereby maintaining the authenticity of Andorran cuisine. The pursuit of authenticity was a recurring theme in the presentation, with a focus on avoiding dishes that do not represent local tradition.
