Gastronomy as narrative: innovation and collaboration in local cuisine

Dennys Teixeira highlighted an innovative restaurant located in a former cooperative winery near Perpignan. This establishment focuses on using local products and offers high-quality cuisine. Teixeira emphasized the production of a high-altitude wine, made from grapes grown at over 800 meters, and a dish combining trout and mushrooms, highlighting the connection to local producers and their history. The talk also addressed the impact of recent wildfires on biodiversity and beekeeping, suggesting a diversification in the use of beekeeping products such as beeswax and pollen, rather than relying solely on honey. An innovative dish featuring trout cooked in beeswax was mentioned, aimed at showcasing the richness of beekeeping.
Finally, Teixeira emphasized the importance of simplicity in gastronomy, stating that a good dish can be simple if quality ingredients are used, and the need to collaborate with producers to educate customers about the culinary process.
