Five stars and a diamond in the house of Jubany
The unique boutique restaurant El Diamant, located in the heart of an exclusive shopping and leisure centre in the shape of a diamond, was the incomparable setting for an exceptional dinner prepared by the chef, the indefatigable Nandu Jubany, together with four equally prestigious chefs.
As an impeccable host, Jubany welcomed the guests with a tasting of hors d'oeuvres based on pickles, air baguette with the best cecina, homemade pork crackling, prawn salad with garlic, tomato tartar with tuna belly, tavertet and chanterelles with homemade butifarra del Perol (pork sausage).
The menu was then opened by the chef of the Moments ** restaurant (Barcelona), Raül Balam, with his El Padrino proposal, based on Pyrenean foal carpaccio with aubergine, tomato confit, basil and orange vinaigrette. This unique dish was followed by the Royal de salazones y ahumados con verduras y licuado vegetal by three-star chef David Yárnoz, who runs the Molino de Urdániz ** in Navarre. From Gaig (Barcelona) came Carles Gaig with his delicious salpicón de manzana con bogavante azul y gamba de Palamós, and Eduardo Salanova, from the restaurant Canfranc* (Huesca), closed the main courses with El cordero de Mar, his tribute to l'Agneau prés salès del Mont Saint Michel.
Nandu Jubany returned to the table to finish with a fig and millefeuille tart with cheese ice-cream, Tobleandorra and fresh cheese, and quin cacau wafers to round off the experience.
