With this presentation, Jordi Grau and his team will show a little of what they mean when they say that they carry out a study of customs, traditions, products and producers. All of this is the creative driving force behind Ibaya's cuisine.
This philosophy leads them to ask themselves questions such as: how did they live in the mountains when the weather conditions were infinitely more extreme? How did they survive and feed themselves at a time when work was much more physical than it is today and food was a fundamental pillar?
