Canfranc Express, historical trans-Pyrenean cuisine

This talk will be a gastronomic journey through time with the presentation of Canfranc Express, a unique restaurant that brings together the history, culture and flavours of the Trans-Pyrenees on board a railway carriage.

Salanova will explain how he transformed a 1927 carriage into a gastronomic setting to showcase Aragonese cuisine. Cooking at an altitude of 1,190 metres, just a few kilometres from France, gives the chef the opportunity to select the best local and seasonal products, influenced by the valleys the train passes through.

His philosophy is based on positioning the culinary heritage of Aragon, reinterpreting it with contemporary techniques, to discover the authentic flavours of the region, linked to the spirit of Canfranc.
