Arzak is a city restaurant, yes, but in a small city, San Sebastian, and from its windows you can see the mountains. This makes it all the more appreciative of what nature has to offer.
With this philosophy in mind, in this talk Elena Arzak will talk about the ingredients used in the restaurant, which have a specific weight in its culture. All this in the context of an avant-garde, technical cuisine that is both linked to the future and to tradition.
