More than meets the eye

In this talk, Gemzell will present two dishes that have long been favourites at ÄNG, and which, in a way, exemplify the Nordic range of ingredients that the restaurant works with.
With these dishes, the chef will demonstrate the great difference between the seasons in his country, with a more limited pantry in autumn and winter that does not allow access to vibrant, eye-catching ingredients, which has led him to look for new ways to create memorable taste experiences.
The dishes on display include a mussel dish, which shows how a single ingredient can be used in many different ways in the same dish, and a nettle dish, which shows how they use what is available on the restaurant's doorstep.
