José Antonio is a self-taught sommelier and chef who insists on working with km 0 produce, with maximum respect for its essence and seasonality. He has worked at a number of restaurants, such as Dama Blanca, San Marco, Zalacaín, Maher, LillasPastias, Aquarius and La Cúpula, and has also set up some outlets himself (L’enoteca, Jaleo, lalolabar, la boite).
