The Pyrenees on a plate

‘The Pyrenees on a Plate’ is an exploration of the mountains as a living gastronomic landscape. This landscape is defined by the seasons, biodiversity, local producers, and a culinary culture that has developed over time.
Dennys Teixeira will demonstrate how the Bélesta landscape is reflected in his cuisine, using local produce and maintaining a close relationship with small-scale local producers.
Ingredients, techniques and seasonality thus become the means by which the region is interpreted from a contemporary perspective.
This demonstration will help participants to understand how a landscape can be transformed into a dish, and how cuisine can convey a place's identity. For Teixeira, every ingredient also tells a story, conveys an emotion, and forges a connection between diners and the environment from which the ingredients originate.
