About the tasting menu and the setting

In this demonstration, Manu Franco will address a question that is currently at the heart of haute cuisine: why the tasting menu? Drawing on the concept of 'A Day in the Sierra de Madrid', he will demonstrate how the local area, seasonality, aromatic herbs, family memories, and the identity of Valdemorillo are best expressed through this format, which allows for the creation of a coherent and exciting gastronomic narrative.
He will also explain why his restaurant has chosen the tasting menu to convey its particular approach to cuisine, which is based on four pillars: necessity, happiness, legacy and emotion. The demonstration will include the preparation of some of his most iconic dishes, showcasing how a tasting menu can preserve a region's identity, tell its people's story and create lasting memories.
