Molina runs the Moulin de Léré restaurant in Vailly, France. In addition to his gastronomic excellence, the chef is known for his responsible farming and livestock practices, which minimise the restaurant's environmental impact and promote biodiversity.
This son of winegrowers shares this project with his wife, Irene Gordejuela, who is in charge of the restaurant's dining room. Their environmentally responsible approach has earned them a Michelin star in 2019 and a green star in 2020.
His cuisine is based on vegetables and herbs from the garden and the nearby mountains, combined with the flavours of the lake and the forest. Frédéric offers a thoughtful and semi-improvised interpretation of the products of the moment, which challenges the mind without ever falling into superficiality or artificiality.
