Søren Selin

Søren Selin's cuisine is characterised by refined simplicity, with an emphasis on the quality and freshness of local ingredients.

Trained in the techniques and basic principles of Danish cuisine, Søren Selin gained experience in various fine dining restaurants in Europe, where he developed his own style that combines the classic with the modern. He spent time at Le Relais Louis XII** and Jules Verne*, both in Paris, and at Alberto K in Copenhagen, where he was head chef for four years.

In 2013, Selin joined AOC Restaurant and under his leadership, the restaurant gained international recognition and became a benchmark for Danish haute cuisine, characterised by the creative use of local ingredients and avant-garde techniques. 

Selin is dedicated to highlighting the natural flavours of Danish produce, capturing the essence of the season and the region.  His focus on sustainability and respect for the environment is also reflected in his culinary practices.

Throughout his career, Søren Selin has received numerous awards and accolades. In addition to AOC's Michelin stars, Selin has appeared on lists of the world's best chefs and restaurants, cementing his reputation as one of the leaders of the new generation of Danish chefs.
